0.25 cup celery, diced
0.25 cup red bell pepper, diced
1 small clove, garlic
1 can italian tomatoes with liquid
4 ounce white kidney beans, drained and rinsed
0.5 cup red onion, diced
1 teaspoon Olive and vegetable oil
2 slices bacon, cooked and crumbled

Bean and Bacon Soup Directions

  1. In 1-quart microwave-safe casserole dish, combine onion, celery, bell pepper, garlic and oil. Cover with vented plastic and cook on high, 3 minutes, until softened, stirring halfway through. Add remaining ingredients and stir to combine, recover with vented plastic and microwave on high, 1 minute, until heated.
