Cajun Fried Chicken

whole chicken fryer, cut into pieces

canola oil, for frying

in a bowl mix salt, pepper, cajun seasoning, and paprika.
Season the chicken with halkf of the spices, rubbing well
Add the four to the remaining spices and roll the chicken in the flour.
In a large skillet, preferable cast iron, add enoug oil to equal 1/2 to 3/4 inch hot oil.
Heat oil to 365°.
Place the chicken pieces in the hot oil and cover.
Fry until golden brown, turning once, 15 to 20 minutes.
Drain cooked chicken pieces on a wire rack
