Ingredients

Meat Sauce:

1 lb sweet & Spicy Italian sausage
1 clove garlic, crushed (you may add 1 more clove if needed)
1 Tablespoon Basil, whole
1 1/2 teaspoon salt
1 28 ounce can stewed tomatoes
2 6 ounce can tomato paste

Lasagne:

10 ounce Lasagne noodles
1 teaspoon salt
1/2 teaspoon oil
water, boiling

Cheese Filling:

4 cups Ricotta cheese (or cottage cheese for moister lasagna)
1 cup grated Parmesan or Romano cheese
3 large eggs, beaten
3 teaspoon salt

1 16 ounce bag mozzerella cheese

Renee's Lasagne Directions

  1. for the sauce:
  2. Brown meat slowly. Spoon off fat. Break in small pieces. Add remaining ingredients. Simmer uncovered ½ hour. Then;
  3. Note ! This is meat sauce only
  4. for the noodles:
  5. cook 10 oz. lasagne or wide noodles until tender in a large amount of salted water, add ½ tsp oil then cook about 10-20 minutes. Drain, rinse in cold water. ½ tsp oil keeps noodles from sticking during boiling process
  6. For the cheese filling: 
  7. Mix first four ingredients. Place half of the cooked noodles in a 13x9x2 baking dish. Spread ½ the cheese filling over noodles. Cover with ½ of the sliced Mozzarella cheese then ½ meat sauce. Repeat layers. Bake in moderate oven at 375 degrees for 30 minutes. Before serving, let stand 10 minutes. Filling will set slightly. Makes about 12 servings.

  9. You can assemble a day ahead and then bake about 45 to 60 min or until it bubbles, flavors blend and intensifies. over night
