Ingredients

Meat

1 lb ground beef
1 1.25 ounce pkg taco seasoning mix
2/3 cup salsa
1/4 cup jalapeno juice (or a puree without the seeds.)

Tortillas

1/4 cup canola oil
6 8 inch flour tortillas

Toppings

2 cup Mexican cheese blend
1 1/2 cup shredded lettuce
2 medium tomatoes, chopped
1 6 ounce can olives, chopped
1 8 ounce container guacamole
1 cup sour cream

Las Chalupas Directions

  1. In a large skillet over medium heat, brown the beef.
  2. Add taco seasoning, salsa, and jalpeno juice.
  3. Add a little water if mixture is too dry.
  4. Reduce heat to low and simmer for 10 minutes.
  5. In another large skillet, heat oil ro medium high heat.
  6. Fry totillas until flat and cripsy on both sides.
  7. Place tortillas on individual oven-proof plates.
  8. Cover each tortilla with meat mixture, then spread cheese over the top.
  9. Broil 6 inches from heat until the cheese melts, about 2 minutes.
  10. Remove plates and top cheese with shredded lettuce, tomatoes and olives.
  11. Place dollops of guacomole and sour cream in the centers of chalupas.
