Meat
1 lb ground beef |
1 1.25 ounce pkg taco seasoning mix |
2/3 cup salsa |
1/4 cup jalapeno juice (or a puree without the seeds.) |
Tortillas
1/4 cup canola oil |
6 8 inch flour tortillas |
Toppings
2 cup Mexican cheese blend |
1 1/2 cup shredded lettuce |
2 medium tomatoes, chopped |
1 6 ounce can olives, chopped |
1 8 ounce container guacamole |
1 cup sour cream |
Las Chalupas Directions
- In a large skillet over medium heat, brown the beef.
- Add taco seasoning, salsa, and jalpeno juice.
- Add a little water if mixture is too dry.
- Reduce heat to low and simmer for 10 minutes.
- In another large skillet, heat oil ro medium high heat.
- Fry totillas until flat and cripsy on both sides.
- Place tortillas on individual oven-proof plates.
- Cover each tortilla with meat mixture, then spread cheese over the top.
- Broil 6 inches from heat until the cheese melts, about 2 minutes.
- Remove plates and top cheese with shredded lettuce, tomatoes and olives.
- Place dollops of guacomole and sour cream in the centers of chalupas.
