To make the lady fingers,
Preheat the oven to 375°
Seperate the eggs.
With an electric mixer, beat the egg whites till frothy, then add a little fo the sugar. continue to beant until eggs atr a light peakadd little more sugar, beating again. Beat a little mors adding the sugar very slowly as you continue to beat the egg whites to stiff peaks.
Add the egg yolks, and continue to beat to stiff peaks.
Add the cake flour, sifting into the bowl, gently folding into the egg mixture, until well combined and mixture is smooth
Place into a piping bag with a large round tip (about a size 20)
Pipe onto a cookiesheet lined with a silicone liner or parchment (should be about 24 of them.)
Dust lightly with powdered sugar sifted over the top.
Bake 7 to 8 minutes.
Remove and cool on a cooling rack on the parchment.
For the coffe syrup
combine the water with the instant coffee crystals, heating until disolved in a sauce pan (can use 100 ml of brewed coffee.)
Add the sugar, mixing to dissolve.
For the rest fo the Tiramisu:
Put the egg yolks ina bowl with the sugar. Whisk together until the sugar is dissolved and the mixture is runny.
Add the rum, continue to whis until well combined.
Place over a pot of boiling water, continue to whisk until mixture lightens.
Remove from hot water, and add the mascarpone cheese.Whisk into the egg mixture.
In a seperate bowl, whip the heavy cream till soft peaks form.
Whisk gently into the egg mixture until well combined
In a seperate bowl, add the egg whites and 20 grams of sugar, beating until hard peaks form.
Fold gently into the egg yolk mixture, little at a time until all of the egg white is incorporated into the rest of the mixture.
Place the coffee syrup in a bowl big enough to soak the fresh lady fingers in..
Soak the lady fingers until soaked, removing them to place in a shallow dish, lining them along the bottom.
Pour half of the tiramisu mixture over the ladyfingers., then adding more soaked ladyfingers over the egg mixture. lining them like you did on the bottom.
Pour the remaining egg mixture over the top of the dsoaked lady fingers.
Refrigerate until set.
Dust the top of the tiramisu with sifted cocoa powder.
Feel free to garnish with blackberries, raspberries that have been lightly rolled in sugar.
