Muffins

2 cups boiling water
5 tsp baking soda
1 tsp salt
1 cup butter
2 cup sugar
4 eggs
1 tbs buttermilk
5 cup flour
1 8 ounce package dates, chopped
1 cup walnuts/pecans, chopped
1 cup raisins
1 17 ounce pkg bran cereal (all bran, Raisin Bran, Grape nuts, etc)

7-Week Bran Muffins Directions

  1. Mix and cool the boiling water, baking soda and salt.
  2. Cream together the butter, sugar, and eggs.
  3. Add the buttermilk and flour and stir until smooth.
  4. Add the water mixture, dates, nuts and raisins.
  5. Add the bran cereal
  6. Fill paper muffin cups 1/2 full.
  7. Bak in microwave 1 minute
  8. If baking in a muffin tin, make sure it is well greased and bake at 425° for 15-20 minutes.

Notes

This can be stored in the refrigerator for 7 weeks.
