Muffins
| 2 cups boiling water |
| 5 tsp baking soda |
| 1 tsp salt |
| 1 cup butter |
| 2 cup sugar |
| 4 eggs |
| 1 tbs buttermilk |
| 5 cup flour |
| 1 8 ounce package dates, chopped |
| 1 cup walnuts/pecans, chopped |
| 1 cup raisins |
| 1 17 ounce pkg bran cereal (all bran, Raisin Bran, Grape nuts, etc) |
7-Week Bran Muffins Directions
- Mix and cool the boiling water, baking soda and salt.
- Cream together the butter, sugar, and eggs.
- Add the buttermilk and flour and stir until smooth.
- Add the water mixture, dates, nuts and raisins.
- Add the bran cereal
- Fill paper muffin cups 1/2 full.
- Bak in microwave 1 minute
- If baking in a muffin tin, make sure it is well greased and bake at 425° for 15-20 minutes.
Notes
