Ingredients

Ingredients:

2 pounds lobster tails (or shells from cooked lobsters)
2 Tablespoons Butter
1 medium onion, chopped
2 med celery stalks, chopped
3 Tablespoons tomato paste
1/2 cup brandy
4 cups fish stock (or chicken stock)
1 cup heavy cream
1 teaspoon thyme
1 dash to taste salt, pepper, or cayenne pepper
1/4 cup chives, chopped for garnish

Lobster Bisque Directions

    • In a pot, sauté onion/celery/carrots in butter 5 min. Add tomato paste; cook 2 min.
    • Add lobster shells (if using), brandy (flambé if desired), stock, thyme. Simmer 30 min.
    • Remove shells; blend soup smooth. Return to pot, stir in cream, simmer 5 min. Season.
    • For full tails: Poach separately, chop, and add to bowls. Garnish with chives. Notes: Creamy and indulgent—Rory would savor it, but it's pricey. Use frozen lobster for ease.
