Ingredients:
| 2 pounds lobster tails (or shells from cooked lobsters) |
| 2 Tablespoons Butter |
| 1 medium onion, chopped |
| 2 med celery stalks, chopped |
| 3 Tablespoons tomato paste |
| 1/2 cup brandy |
| 4 cups fish stock (or chicken stock) |
| 1 cup heavy cream |
| 1 teaspoon thyme |
| 1 dash to taste salt, pepper, or cayenne pepper |
| 1/4 cup chives, chopped for garnish |
Lobster Bisque Directions
- In a pot, sauté onion/celery/carrots in butter 5 min. Add tomato paste; cook 2 min.
- Add lobster shells (if using), brandy (flambé if desired), stock, thyme. Simmer 30 min.
- Remove shells; blend soup smooth. Return to pot, stir in cream, simmer 5 min. Season.
- For full tails: Poach separately, chop, and add to bowls. Garnish with chives. Notes: Creamy and indulgent—Rory would savor it, but it's pricey. Use frozen lobster for ease.
