In a seperate pan place the chopped chicken breasts, onion, thyme, bay leaf in salted water. When chicken is cooked, drain the water.( you can save the stock from the chicken for another dish.)
Combine onion, green onions, celery, grapes, apple and pineapple.
Add the cooled chicken.
In a seperate bowl, combine the mayonnaise, coleslaw dressing, salt and pepper. pour over the chicken and vegetables.
