Ingredients:
1 cup vanilla wafer crumbs |
1/2 cup graham cracker crumbs |
3 Tablespoons sugar |
2 teaspoons lemon rind, grated |
6 Tablespoons butter |
Filling:
1 cup cheddar cheese, grated |
4 8 ounce packages cream cheese |
1 1/2 cups sugar |
5 large eggs |
1/2 cup whipping cream |
1/2 teaspoon vanilla |
Cheesecake Royal Directions
- Mix crumbs, sugar and 1 teaspoon of lemon rind; blend in butter. Press mixture evenly over bottom and sides of a 8" springform pan. Chill.
- Blend Cheddar into softened cream cheese until no flecks remain.. Blend in sugar and beat in eggs, one at a time. Stir in cream, vanilla, and remianing lemon rind. Pour mixture into crust. Bake at 500°F. for 12 minutes; lower heat to 250°F and continue baking for 2 hours or until firm. Cool on wire rack, then run knife blade around edge to loosen cake from sides or pan. Release spring and carefully lift off side of pan leaving cake on metal base.
