Ingredients

Black Bean Salsa

1 15 ounce can Black beans, drained and rinsed
1 large tomato, seeded and chopped
1/2 cup chopped red onion
2 teapoon fresh cilantor, chopped
2 Tbs olive oil
1 1/2 Tbs fresh lime juice
1 Tbs red wine vinegar
1/4 tsp salt
1/4 tsp pepper
1 large avacado
1 cup white corn (optional)

Southwestern Black Bean Salsa Directions

  1. Combine all ingredients, cover, and chill 2-4 hours. Makes 2 1/2 cups.
  2. Add 1 avocado, cut up, just before serving. (Vary ingredient amounts to taste. I usually add more cilantro.  Also, a cup of white corn niblets can be added for variety.)
