Ingredients
Black Bean Salsa
1 15 ounce can Black beans, drained and rinsed |
1 large tomato, seeded and chopped |
1/2 cup chopped red onion |
2 teapoon fresh cilantor, chopped |
2 Tbs olive oil |
1 1/2 Tbs fresh lime juice |
1 Tbs red wine vinegar |
1/4 tsp salt |
1/4 tsp pepper |
1 large avacado |
1 cup white corn (optional) |
Southwestern Black Bean Salsa Directions
- Combine all ingredients, cover, and chill 2-4 hours. Makes 2 1/2 cups.
- Add 1 avocado, cut up, just before serving. (Vary ingredient amounts to taste. I usually add more cilantro. Also, a cup of white corn niblets can be added for variety.)
