Ingredients

Vegetarian Chopped Liver

1 1/2 cup green beans, cooked and finely ground
1 large hard-boiled egg
1 medium onion, chopped
2 Tbs vegetable oil
1 dash salt
1 dash pepper

Vegetarian Chopped Liver Directions

  1. Mash hard-cooked egg with beans. Lightly brown chopped onion in hot oil and add seasoning to suit the taste with salt and pepper. This should be a compact mass and look just like chopped beef of calf's liver.
  2. Use on canapes, for filling celery, or shape into tiny marble-sized balls and serve as a salad on shredded chicory of mixed greens.
  3. Garnish with black or pitted green olives, or dot with a bit of sour cream and sprinkle with paprika.
