Ingredients

Fondant

4 cups sugar
1/2 cup corn syrup
1 cup water

Water Fondant Directions

  1. Place in a heavy kettle and bring to a boil.
  2. Wash side of kettle and place a lid on, to form steam and break down the sugar crystals.
  3. Remove lid after 2 or 3 minutes.
  4. Cook to 232° and pour on wet marble slab to cool.
  5. When luke warm, beat till it turns white and creamy and looses its gloss.
  6. Beating must be constant or the candy will grain.
  7. Place in a covered bowl with a damp cloth on top.
