Ingredients
Fondant
4 cups sugar |
1/2 cup corn syrup |
1 cup water |
Water Fondant Directions
- Place in a heavy kettle and bring to a boil.
- Wash side of kettle and place a lid on, to form steam and break down the sugar crystals.
- Remove lid after 2 or 3 minutes.
- Cook to 232° and pour on wet marble slab to cool.
- When luke warm, beat till it turns white and creamy and looses its gloss.
- Beating must be constant or the candy will grain.
- Place in a covered bowl with a damp cloth on top.
