Ingredients

Soup

1 lb Italian sausage
1 cup onion, chopped
2 cloves garlic, crushed
5 cups beef broth
2 cups tomatoes, chopped
1 8 ounce can tomato sauce
1/2 tsp oregano
1 cup water
1 cup carrots
1/2 tsp basil
1 1/2 cup zucchini
3 Tbs fresh parsley, chopped
1 medium green pepper, chopped
8 ounces mini tortellini or ravioli

Italian Sausage Soup with Tortellini Directions

  1. Remove the casings from the sausage if necessary.
  2. Brown the sausage in a deep pan.
  3. Remove
  4. Drain all but 1 tablespoon of fat from the pan.
  5. Saute' onion and garlic.
  6. Add the broth, the sausage, tomatoes,tomato sauce, oregano, water, basil, and carrots
  7. Bring to a boil.
  8. Reduce the heat and simmer, covered for 30 minutes.
  9. Skim off the fat.
  10. Stir in, zucchini, parsley, green pepper, and the ravioli or tortellini
  11. Sommer, covered for 20-30 minutes until the tortellini/ravioli is tender.
  12. Serve with grated Parmesan cheese.
