Ingredients

Soup

1 lb bulk Italian sausage
1 cup onion, chopped
2 cloves garlic, crushed
5 cup beef broth
1 cup water
2 cups tomatoes, chopped
1 cup carrots, sliced
1/2 tsp basil
1/2 tsp oregano
8 ounces tomato sauce
1 1/2 cup zucchini
3 Tbs parsley, chopped
1 medium green pepper, chopped
8 ounces frozen tortellini

Italian Sausage Soup with Tortellini I Directions

  1. Use bulk sausuage or take the casings off regualr sausage.
  2. Brown the sausage
  3. Remove from Dutch oven.
  4. Retain 1 Tablespoon of sausage drippings.
  5. Saute onion and garlic in reserved drippings until tender
  6. Add beef broth, water, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
  7. Bring to a boil.
  8. Reduce Heat.
  9. Simmer, unvovered, 30 minutes.
  10. Skim fat.
  11. Stir in zucchini, toretelini, parsley and green pepper.
  12. Simmer covered, until tortellini is tender (20-30 minutes.)
  13. Sprinkle with Parmesan cheese.
