Ingredients

Soup

2 cup onion, finely chopped
1 clove garlic, minced
3 cup cabbage, finely shredded
2 cups carrots, finely diced
1 cup green beans, cut
2 large potatoes, cubed
2 cup zucchini, chopped
4 ounces fresh mushrooms, sliced
2 cups stewed tomatoes
2 Tbs parsley, minced
1 Tbs Basil
1/2 tsp rosemary
2 cups tomato juice
1 cups beef or vegetable stock
1 cup kidney beans
3/4 cup whole wheat macaroni (optional)
1/3 cup barley cooked

Marvelous Minestrone Soup Directions

  1. Sauté' the onion until transparent.
  2. Combine garlic, cabbage, carrots, green beans, potatoes, zucchini, mushrooms and tomatoes in a large pot.
  3. Add sautéed onion and cook for 10 minutes.
  4. Add parsley, basil, rosemary, tomato juice, and bouillon.
  5. Puree 1/2 cup kidney beans in blender and add to soup.
  6. Add remaining 1/2 cup whole kidney beans.
  7. Bring to a boil.
  8. Reduce heat.
  9. Heat and simmer 25 minutes.
  10. Add macaroni and barley.
  11. Cook for 15 minutes longer.
  12. Serve hot!
