Ingredients

Spaetzle

2 large eggs
2 cups flour
3/4 cup water
1 dash salt to taste

Spaetzle Cut Noodles Directions

  1. Combine eggs, water, flour, and salt, beating until smooth.
  2. Put batter into the square spaetzle maker (or sieve with large holes like a vegetable steamer) over a pot of salted boiling water or cooking soup.
  3. Slide basket back and forth, letting tiny dumplings fall into the boiling water.
  4. When done,, they will rise to the surface.
  5. Use a large slotted spoon to dip them out into a large bowl.
  6. Repeat until the dough is used up.

Notes

Note: As a side dish, toss the speatzle in brown butter.

As a main dish, like cheese spaetzle, serve with browned onions and shredded Swiss cheese in a large pan.

Great with a crisp salad.

For soup or colorful side dish, dough can be dyed with tomato puree', spinach puree', finely chopped herbs, or beet-root juice.
