3 medium bananas, very ripe,and mashed well
2 large eggs, well beaten
2 cup flour
3/4 cup sugar
1/2 tsp salt
1 tsp baking soda
1/2 cup walnuts, chopped

Banana Nut Bread Directions

  1. Mix bananas and eggs.
  2. Stir in flour, sugar, salt and baking soda.
  3. Add walnuts and blend.
  4. Spray loaf pan with cooking spray.
  5. Pour batter into pan.
  6. Cook at 350° for about 40 minutes. Check at 30 minutes or so to see if it's done, should be lightly browned on top and not too gooey when you stick a fork in the middle.
  7. Makes 1 loaf.
