California Scramble

4 large egg whites
2 large eggs
1/4 tsp pepper
2 6 inch corn tortillas, halved and cut into strips
1/4 cup fresh spinach
2 Tbs cheddar cheese, shredded
1/4 cup salsa

California Scramble Breakfast Directions

  1. Beat egg whites, eggs, and pepper.
  2. Add tortillas, cheese and spinach.
  3. In a hot, greased skillet, add the egg mixture.
  4. Stir and cook until eggs are done.
  5. Serve with salsa.
