Red Potato Pepper & Onion Hash
1 1/2 pounds red potatoes |
1/4 pound bacon strips, chopped |
3/4 cup ham, fully cooked and cubed |
1/2 tsp salt |
1/4 tsp pepper |
1 cup cheddar cheese, grated |
Red Potato Pepper & Onion Hash Directions
- Put potatoes in instapot, and cook as directed, OR place on plate and cook potatoes in a microwave until tender
- In a cast-iron pan, cook bacon until crisp.
- Remove from pan, leaving drippings
- Cube potatoes and put in bacon drippings until potatoes are lightly brownd and edges are crips.
- Add the ham, salt pepper and bacon and cook until warm.
- Add cheese and stir until cheese is melted
- Serve with sour cream.
