Ingredients

Red Potato Pepper & Onion Hash

1 1/2 pounds red potatoes
1/4 pound bacon strips, chopped
3/4 cup ham, fully cooked and cubed
1/2 tsp salt
1/4 tsp pepper
1 cup cheddar cheese, grated

Red Potato Pepper & Onion Hash Directions

  1. Put potatoes in instapot, and cook as directed, OR place on plate and cook potatoes in a microwave until tender
  2. In a cast-iron pan, cook bacon until crisp.
  3. Remove from pan, leaving drippings
  4. Cube potatoes and put in bacon drippings until potatoes are lightly brownd and edges are crips.
  5. Add the ham, salt pepper and bacon and cook until warm.
  6. Add cheese and stir until cheese is melted
  7. Serve with sour cream.
