Ingredients

Double BLT

8 strips bacon, halved
1/2 cup mayonnaise
1 Tbs balsamic vinegar
1/2 tsp fresh ground pepper
1/8 tsp salt
8 slices bread, toasted
2 cups spring mix salad greens
8 slices cherry tomatoes
1 medium ripe avocado

Double BLT Directions

  1. Cook the bacon in a large skillet over medium heat until crispy.
  2. When done, place on paper towels to drain.
  3. In a small bowl, mix mayonnaise, vinegar, salt and pepper.
  4. Spread the mayonnaise on the four slices of toasted bread.
  5. Layer the bacon, salag greens, tomatoes and avocadoes in order.
  6. Spread mayonnaise over the remaining toast and place on top of the sandwich.
  7. Slice in half.
  8. Serve
