Ingredients:
4 large potatoes (more if needed) |
1 6 ounce can tuna, drained |
1 cup cheddar cheese |
Carbonara sauce:
1 medium onion, chopped |
1 clove garlic, crushed |
4 slices proscuitto |
2 Large Eggs |
1 1/4 cup cream |
1 dash salt |
1 dash pepper |
1/2 cup parmesan |
Tuna Spuds Directions
- Scrub and place potatoes in an oven , On a cookie sheet at 350°, for 40 minutes or until done.
- For the sauce, sauté the onion, garlic ans proscuitto.
- Mix the cream, eggs and add the salt and pepper to taste.
- Drain the tuna and add to the sauce along with the Spring onions. Take the potatoes split them in half, pour the sauce over the potatoes and top with cheddar cheese. Put back in the oven until cheese is melted Serves 4 to 6
