Ingredients

6 ounces semi-sweet chocolate, chopped
4 Tablespoons unsalted butter, plus a little extra for greasing
1/4 cup all-purpose flour
1 cup whole milk
1/4 cup sugar, plus 1 tablespoon for dusting ramekins
4 large egg yolks
5 large egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
1 pinch salt

Chocolate Soufflé (Gilmore Girls-Inspired) Directions

  1. Prep: Preheat oven to 375°F (190°C). Grease six 6-oz ramekins with butter; dust with sugar.
  2. Melt Chocolate: Melt chocolate and butter in a double boiler; set aside to cool slightly.
  3. Make Base: In a saucepan, whisk flour and milk over medium heat until thickened (3 min). Stir in chocolate mixture, ¼ cup sugar, egg yolks, vanilla, and salt. Cool slightly.
  4. Whip Egg Whites: Beat egg whites with cream of tartar until soft peaks form. Gradually add 1 tbsp sugar; beat to stiff peaks.
  5. Fold and Bake: Gently fold egg whites into chocolate base in thirds. Divide into ramekins. Bake 18–20 min until puffed and set.
  6. Serve: Dust with powdered sugar or top with whipped cream; serve immediately to wow guests.

Notes

Why Soufflé? Its elegance and drama suit Emily’s style, perfect for a post-dinner flourish.

Tips: Don’t open the oven during baking to ensure rise. Prep base ahead; fold in whites just before baking.

Serving Suggestion: Serve with a small scoop of vanilla ice cream for a Lorelai-approved touch.
