Ingredients

Brownies

2 cup zucchini, grated
0.5 cup oil
2 tsp vanilla
0.5 cup nuts (optional)
2 cups flour
1.5 cup sugar
1 tsp salt
1.5 tsp baking soda
0.25 cup cocoa

Fudge Frosting

0.5 cup butter
4 Tbls milk
1 Tbls cocoa
1 tsp vanilla
3 cups powdered sugar

Zucchini Brownies Directions

  1. Mix all ingredients together.
  2. Spread in an ungreased jellyroll or 9 x 13-inch pan
  3. Bake at 375° for 20-25 minutes
  4. FOR THE FROSTING: Frost the brownies before cooling.
  5. Bring butter, milk and cocoa to a boil.
  6. While still hot, mix with powdered sugar.
  7. Frost Immediately. 
  8. Frosting should harden quickly
