1 7.5 ounce can crabmeat
1 1/2 cups soft bread crumbs
1/2 cup celery, minced
1/4 teaspoon onion powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon tarragon, crumbled
1/4 cup margarine
3 large filets sole
1 1/2 Tablepsoons lemon juice
1/4 cup dry white wine
1 dash paprika

Fish Fillets with Crab Meat Directions

  1. Combine crabmeat, breadcrumbs, celery, onion powder, salt, pepper, tarragon, and 2 tablespoons of melted butter or margarine. Cut filets in half crosswise; sprinkle lightly with salt. Divide crab mixture of monk six pieces of fillet, Placing stuffing at one end of each piece. Roll up filets; fashion each with wooden picks. Place rolls in shallow baking dish. Pour lemon juice, wine and remaining melted butter or margarine over fish. Bake at 350° F, basting occasionally with pan juices, 25 to 30 minutes or until fish flakes easily. Sprinkle with paprika. 
  2. Makes six servings
