Ingredients:
2 cups carrots, thinly sliced |
1/2 cup water |
1 teaspoon Bon Appetit seasoning |
3 teaspoon chicken seasoned stock base (bullion) |
1 Tablespoon lemon juice |
4 Tablespoons butter |
2 tablespoon flour |
1/4 teaspoon ginger |
1/8 teaspoon onion powder |
2 cups milk or cream |
Cream of Carrot Soup Directions
- Combine carrots, water, half teaspoon Bon Appetite (recipe at end of recipe), 1 teaspoon of season stock base and lemon juice. Cook over low heat until carrots are tender and liquid is reduced to about 1 tablespoon.
- Melt butter, add flour and the remaining seasonings, stirring until smooth. Add milk and simmer, stirring until thickened. Puree carrots in blender or mashed really good. Add carrots to milk mixture and stir until well blended. If too thick, add additional milk or cream. Serve hot.
- Bon Apetit seasong:
- 1 Tablespoon celery salt
- 1 Tablespoon sugar
- 1 teaspoon onion powder
- Combine ingredients and place in shaker.
