Pineapple Bran Muffins
1 cup all-bran cereal |
1/2 cup milk |
1 cup crushed pineapple |
1/4 cup raisins |
1/4 cup shortening |
1 egg |
1 cup all-purpose flour |
2 tsp baking powder |
1/2 tsp salt |
1/4 tsp soda |
1/2 cup brown sugar, firmly packed |
Pineapple Bran Muffins Directions
- Combine all-bran, milk, pineapple, and raisins.
- Add shortening and egg; mix well.
- Combine flour, baking powder, salt, soda, and brown sugar.
- Add to first mixture and mix until dampened.
- Divide the dough evenly between paper-lined muffin cups.
- Bake in a 400° oven 25 to 30 minutes
- Makes 12 muffins
