1 lb white pea beans |
3 qts water |
1 Tbs onion, minced |
1/2 tsp celery salt |
1/2 tsp dry mustard |
2 tsp salt |
1 dash pepper |
1 Tbs chopped parsley |
2 large ham hocks or ham bone. |
Old-Fashioned Bean Soup Directions
- Wash the beabs
- Soak beans in water overnight. DO NOT DRAIN.
- Add ham hock or bone, onion, and celery salt.
- Cook beans until very soft (2 1/2 to 3 hours)
- Remove hocks or bone.
- Take off the meat, chop, Set aside.
- Bruise beabs with a large spoon, enought to cloud the soup.
- Add meat, mustard, salt and pepper
