Ingredients

Soup

1 lb white pea beans
3 qts water
1 Tbs onion, minced
1/2 tsp celery salt
1/2 tsp dry mustard
2 tsp salt
1 dash pepper
1 Tbs chopped parsley
2 large ham hocks or ham bone.

Old-Fashioned Bean Soup Directions

  1. Wash the beabs
  2. Soak beans in water overnight. DO NOT DRAIN.
  3. Add ham hock or bone, onion, and celery salt.
  4. Cook beans until very soft (2 1/2 to 3 hours)
  5. Remove hocks or bone.
  6. Take off the meat, chop, Set aside.
  7. Bruise beabs with a large spoon, enought to cloud the soup.
  8. Add meat, mustard, salt and pepper
