Ingredients

Soup

1/2 cup fresh onion, chopped
2 tsp fresh garlic, chopped
1/2 tsp thyme
1/3 cup basil, finely chopped
3/4 cup butter
2 Tbs olive oil
3/4 cup finely chopped celery
3/4 cup carrots, shredded
2 28 ounce can Italian styled tomatoes
4 Tbs tomato paste
1/4 cup flour
2 1/2 14.5 ounce cans chicken broth
1 cup heavy cream
1 tsp sugar
1 dash Salt & pepper to taste

Creamy Tomato and Garlic Soup Directions

  1. Saute the chopped onion, thyme, and basil in butter and olive oil until onion wilts.
  2. Put onion and vegetable mixture and add to blender along with italian tomatoes and tomato paste.
  3. Mix small amount of the chicken broth with flour.
  4. Blend until smooth.
  5. Pour back in pot and add chicken broth, cream, sugar, and salt and pepper to taste.
