Ingredients

Soup

1 tsp olive oil
1 lb boneless chicken breasts, chopped
1 large onion, chopped
5 large cloves garlic, crushed
1 medium green pepper, chopped
1 medium red pepper, chopped
1 Tbs curry powder
1 Tbs fresh ginger, grated
1/2 tsp red or black pepper
4 cups chicken broth or stock
2 15 ounce cans diced tomatoes
2 Large Granny Smith Apples, chopped
1 cup white or brown rice, uncooked

Curried Chicken and Apple Soup Directions

  1. Cook everything down to the broth/stock togather in a large saucepan until chicken isn't pink anymore and onion is tender.
  2. Then add the chicken stock, rice and dice tomatoes.
  3. Bring to a boil, then reduce to a simmer.
  4. Simmer about 20 minutes, or until rice is tender.
  5. Add the apples and cook about 8 minutes or until apples are somewhat soft and the rice is done.
  6. If desired, serve with a garnish of chopped cilantro and a dollop of plain yogurt.
  7. Great with a warm, crsty bread.
