Ingredients

Salad

1 large shallot
1 Tbs Dijon mustard
1 Tbs red wine vinegar
2 Tbs honey
2 large firm pears, cut in 1/2 inch cubes
1/2 cup mixed greens
1/2 cup vegetable oil
1 Tbs water
1/8 tsp salt
3/4 tsp coarsely ground pepper
1/3 cup bleu cheese crumbled
1/4 cup pine nuts, toasted
1 dash salt and pepper to taste

Mixed Greens with Pears Bleu Cheese and Pine Nuts Directions

  1. To make the dressing, combine the shallot, mustard, vinegar, honey, oil, water, salt and pepper in a small jar.
  2. Shake well to combine.
  3. Chill before serving.
  4. Toss diced pears with 1/4 cup dressing and refrigerate for at least 2 hours.
  5. To serve, place greens in a large shallow bowl and toss with remaining dressing.
  6. Divide among 6 chilled serving plates and sprinkle lightly with salt and pepper.
  7. Scatter pears over the greens and garnish with crumbled bleu cheese and pine nuts.
  8. Serve immediately
