Salad
1 large shallot |
1 Tbs Dijon mustard |
1 Tbs red wine vinegar |
2 Tbs honey |
2 large firm pears, cut in 1/2 inch cubes |
1/2 cup mixed greens |
1/2 cup vegetable oil |
1 Tbs water |
1/8 tsp salt |
3/4 tsp coarsely ground pepper |
1/3 cup bleu cheese crumbled |
1/4 cup pine nuts, toasted |
1 dash salt and pepper to taste |
Mixed Greens with Pears Bleu Cheese and Pine Nuts Directions
- To make the dressing, combine the shallot, mustard, vinegar, honey, oil, water, salt and pepper in a small jar.
- Shake well to combine.
- Chill before serving.
- Toss diced pears with 1/4 cup dressing and refrigerate for at least 2 hours.
- To serve, place greens in a large shallow bowl and toss with remaining dressing.
- Divide among 6 chilled serving plates and sprinkle lightly with salt and pepper.
- Scatter pears over the greens and garnish with crumbled bleu cheese and pine nuts.
- Serve immediately
