Ingredients

Sauteed

2 large Yams or sweet potatoes
1/4 tsp cinnamon
3 Tbs butter
2 Tbs lemon
1/2 cup brown sugar

Sauteed Sweet Potatoes or Yams Directions

  1. Parboil or cook yams/sweet potatoes in microwave until fork tender (not too soft.)
  2. Cool, peel and slice.
  3. Mix cinnamon with melted butter; add lemon juice and brown sugar.
  4. Spray fry pan with Pam or other cooking spray.
  5. Add yams to the pan.
  6. Pour cinnamon butter mixture over and sauté yams until browned and crispy on edges
