Ingredients
The Special
1 10 ounce package frozen spinach |
1 med onion, chopped |
1 clove garlic, finely minced |
2 Tbs olive oil |
1 lb lean ground beef |
4 large eggs, lightly beaten |
1 dash salt & Pepper, to taste |
Joe's Special Directions
- Thaw frozen spinach and drain well or cook fresh spinach and drain well.
- Set aside.
- In a heavy skillet, saute onion and garlic in oil until onion is transparent.
- Add beef and brown thoroughly.
- Sprinkle with salt and pepper; stir in reserved spinach.
- Keeping heat high, add eggs to the skillet, stirring constantly until eggs are blended and cooked.
- Adjust seasonings and serve immediately
Notes
My family likes to sauté mushrooms and add it when we are sautéing the onions.
We eat it for breakfast and eat it with rice.
Also, we use washed fresh spinach if we have it and sauté' it with the onions. If you go that route, you will need 1/2 lb of fresh spinach.
