1 cup carrots, grated |
1 cup mashed potatoes |
1 cup sugar |
1 cup flour |
1/2 cup raisins |
1/2 cup currants |
1/8 cup salt |
1/2 cup walnuts |
1/2 cup dates |
1/2 tsp cloves |
1/2 tsp nutmeg |
1/2 tsp cinnamon |
Christmas Pudding Directions
- Combine all ingredients except mashed potatoes.
- Add 1 teaspoon of baking soda to the mashed potatoes.
- Add to the pudding mixture.
- Pour into a paper-lined pudding mold.
- Boil in water in a double boiler in the top pan for 3 hours.
