Ingredients

Lemon Pie Filling

1/3 cup sugar
1/2 cup cornstarch
1 1/2 cup boiling water
3 eggs, lightly beaten
1/2 cup lemon juice
1/2 Tbs grated lemon peel
2 Tbs butter

Lemon Pie Filling Directions

  1. In a 4-cup glass measuring cup, blend sugar and cornstarch together with boiling water.
  2. Microwave mixture 4-5 minutes, stirring several timjes.
  3. Wehn mixture becomes translucent, add a little of the hot mixture to the egg yolks, stirring well.
  4. Blend into hot mixture.
  5. Cook on high, 40-60 seconds until thick and even.
  6. Stir in juice, lemon peel and butter.
