Ingredients

Chunky Apple Cake

1/2 cup butter, softened
2 cup sugar
1/2 tsp vanilla
2 eggs
2 cups all-purpose flour
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
1/2 tsp baking soda
6 cup apples, chopped and peeled

Chunky Apple Cake Directions

  1. In a large mixing bowl, cream the butter, sugar and vanilla.
  2. Add eggs, 1 at a time, beating well after each addition.
  3. Combine flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter would be stiff)
  4. Stir in apples until well combined.
  5. Spread into a greased 13 x 9 x 2-inch baking dish
  6. Bake at 350° for 40-45 minutes or until to is lightly browned and springs back when lightly touched.
  7. Cool for 30 minutes before serving.
  8. Meanwhile, in a small saucepan, combine brown sugar and butter.
  9. Cook over medium heat until butter is melted.
  10. Gradually add cream
  11. Bring to a slow boil over medium heat, stirring constantly.
  12. Remove from heat.
  13. Server with cake.
  14. Yield 12-14 servings.
  15. Cake may be topped with a dollop of whipped cream.
