Ingredients

Sausage and Pepper Sandwich

2 Tbs olive oil
1/4 cup olive oil
1 1/2 large onions, thickly sliced
1 large red bell pepper, sliced into thin wedges
1 large green pepper, sliced into thin wedges
1/8 tsp salt
1/8 tsp black pepper, coarsly ground
2 lbs Italian sausage, hot or sweet
6 Hoagie rolls

Sausage and Pepper Sandwich Directions

  1. Place 2 skillet on the stove placing 2 tablespoons of the oliv oil in one and1/4 cup of oliv oil in the other.
  2. In the skillet with 2 tablespoons of oil, add the onions and green peppers, sauteing over medium heat until done. Season with salt and pepper to taste.
  3. In the other skillet, heat the oil over medium heat until not quite hot.
  4. Carefully add the sausages into the in the pan and cook for 15 minutes, or until they are not longer pink inside.
  5. Remove the sausages and place them with the peppers and onions.
  6. Slice the hagie rolls up the side being careful not to go all the way through.
  7. fill with the sausages, peppers and onions.
