Ingredients

Cake

2 cups flour, sifted
1 cup sugar
1 cup dark brown sugar
1 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1 cup Dr. Pepper
1/2 cup chocolate chips
2 large eggs
1 cup buttermilk
1 cup vegetable oil
1 1/2 tsp vanilla

Frosting

3/4 cup butter-flavored shortening
6 Tbs unsalted butter, softened
4 cups confectioners' sugar; sifted
1/4 cup unsweetened cocoa powder
1/4 cup Dr. Pepper
1 1/2 tsp vanilla

Dinosaur BBQ Dr. Pepper Chocolate Cake Directions

  1. Preheat over to 350°
  2. Grease and flour 2 9 inch round cake pans, tapping out any extra flour.
  3. In a large mixing bowl, sift together flour, sugar, brown sugar, cocoa, and baking soda.
  4. Set aside
  5. Pour the Dr. Pepper into a saucepan and add the chocolate chips and on a low heat, stir the mixture often until the chips are just melted.
  6. Remove from heat and set aside.
  7. In a bowl, combine the eggs, buttermilk, oil, and vanilla.
  8. Mix on medium speed for 2 minutes or until combined.
  9. With the mixer running, slowly pour in the Dr. Pepper mixture and continue for 1 minute or until combined to mix the mixture.
  10. Reduce the speed of the mixter to low and slowly add the dry ingredients.
  11. Retur the speed to medium and beat for 2 minutes more.
  12. Divide the batter between the two pans.
  13. Bake for 30 to 35 minutes, or until a toothpick poked in the center comes out clean.
  14. Cool the layers in the pan for 10 minutes, then run a knife around the edges and flip the pans over onto a cooling rack.
  15. Gently lift off the pans, letting the cake layers cool completely.
  16. In a large bowl, add the shortening and butter and beat until soft and fluffy.
  17. Add the confectioners' sugar and cocoa, continuing to mix until combined.
  18. Stir together the Dr. Pepper and vanilla and slowly pour into the frosting with the mixer on high speed to thin the frosting just a bit.
  19. Continue to beat until light and fluffy, about 1 minute.
  20. Set layer 1 down on a plate, Smear 1 cup of the frosting on top and smooth out.
  21. Place the second layer on top of the frosted layer, speeding the rest of the frosting on top and on the sides.
