1 1/2 cups flour |

1/4 cup soft shortening |
1 cup sugar |
1 cup applesauce |
1/4 cup pecans, chopped |
1/2 cup raisins, chopped |
2 teaspoons flour |
Orange Butter cream Frosting:
184 cup butter or margarine |
1/2 teaspoon vanilla |
2 cups confectioners' sugar |
1 teaspoon orange rind, grated |
2 Tablespoons orange juice |
Applesauce Cake Directions
- Heat oven to 350° F. Grease and flour 9 by 9 by 1½ inch pan. Sift flour, baking soda, salt, cinnamon, cloves, and allspice together the shortening, sugar, and eight in medium size mixing bowl until light and fluffy. Add flour mixture alternately with applesauce, beginning and ending with flour. Scrape bowl frequently. Mix nuts, raisins, and 2 teaspoons flour together; fold into batter. Pour into prepared pan. Bake 40 to 45 minutes or until cake springs back when lightly touched with fingertip. Cool in pan 10 minutes. Loosen edges with spatula and remove from pan. If desired, frost with orange butter cream frosting
- Orange butter cream frosting: blend 1/4 cup butter or margarine, 1/2 teaspoon vanilla, and 1 cup sifted confectioners' sugar thoroughly. Beat in 1 cup sifted faction are sugar. Add 1 teaspoon grated orange rind and 2 tablespoons of orange juice. Beat until good spreading consistency.
