Chicken Salad Sandwich
2 large chicken breasts, chopped into chunks( 2 cups) |
1 tbs butter |
1/3 cup celery, biced |
1/4 tsp salt |
1/4 tsp black pepper, freshly ground |
1/3 cup sweet pickle relish |
1/2 cup mayonnaise |
Chicken Salad Sandwich Bread & Toppings
1 24 ounce package Orowheat 100% whole wheat bread, toasted (12 slices) |
1 medium tomato, thinly sliced (optional) |
1 head green leaf lettuce, spine removed (optional) |
Chicken Salad Sandwich Directions
- Cut the chicken into large chunks and saute in butter until chicken is done.
- Minced the cooked chicken and place it in a bowl (you can also puree the chicken in a food processor, but don't over do it.)
- add the remaining ingredients, mixing well
- Toast your bread, placing the salad, lettuce, and tomato, i(f desired) on top
