Ingredients

Cajun Bites

1/3 cup lemon juice
3 cloves garlic, minced
2 Tbs Tabasco sauce
2 Tbs Worcestershire sauce
1 Tbs vinegar
4 large boneless chicken breast halves, cut into bite sized pieces
1 cup seasoned flour (below)
3 large eggs, lightly beaten
canola oil

Cajun Seasoned flour

2 cup flour
2 Tbs salt
1 Tbs celery salt
2 Tbs black pepper, freshly ground
2 Tbs dry mustard
4 Tbs paprika
2 Tbs garlic powder
2 Tbs onion powder
1 Tbs cayenne pepper
1/2 tsp thyme

Cajun Bites Directions

  1. In a bowl, combine the lemon juice seasoning, garlic, vinegar, Tabasco, and Worcestershire sauce.
  2. Add the chicken, cover and let marinade for 6 to 8 ours or overnight.
  3. In a bowl beat the eggs and set aside.
  4. In a separate bowl or shallow dish, combine the seasoned flour
  5. Remove the chicken from the marinade, first dipping in the egg mixture, then the flour mixture
  6. Cook in hot oil at 375°  for 5 minutes.
  7. When done, drain on paper towels.
  8. For the seasoned flour:
  9. Stir together to blend evenly. Store in a tightly covered jar.
  10. For a crumb coating for fish, meat, or poultry combined 1 1/2 tablespoons of seasoned flour with 1 cup dry bead crumbs.
