Cajun Bites
1/3 cup lemon juice |
3 cloves garlic, minced |
2 Tbs Tabasco sauce |
2 Tbs Worcestershire sauce |
1 Tbs vinegar |
4 large boneless chicken breast halves, cut into bite sized pieces |
1 cup seasoned flour (below) |
3 large eggs, lightly beaten |
canola oil |
Cajun Seasoned flour
2 cup flour |
2 Tbs salt |
1 Tbs celery salt |
2 Tbs black pepper, freshly ground |
2 Tbs dry mustard |
4 Tbs paprika |
2 Tbs garlic powder |
2 Tbs onion powder |
1 Tbs cayenne pepper |
1/2 tsp thyme |
Cajun Bites Directions
- In a bowl, combine the lemon juice seasoning, garlic, vinegar, Tabasco, and Worcestershire sauce.
- Add the chicken, cover and let marinade for 6 to 8 ours or overnight.
- In a bowl beat the eggs and set aside.
- In a separate bowl or shallow dish, combine the seasoned flour
- Remove the chicken from the marinade, first dipping in the egg mixture, then the flour mixture
- Cook in hot oil at 375° for 5 minutes.
- When done, drain on paper towels.
- For the seasoned flour:
- Stir together to blend evenly. Store in a tightly covered jar.
- For a crumb coating for fish, meat, or poultry combined 1 1/2 tablespoons of seasoned flour with 1 cup dry bead crumbs.
