Cajun Fried Chicken
1 3 pound whole chicken fryer, cut into pieces |
1 cup all-purpose flour |
1/8 tsp salt, adjust to your taste being careful to compensate for the Cajun seasoning |
1/8 tsp black pepper, freshly ground, adjust for your taste |
1 Tbs paprika |
1 Tbs Cajun seasoning |
1 Tbs cayenne pepper |
1 quart canola oil, for frying |
Cajun Fried Chicken Directions
- in a bowl mix salt, pepper, cajun seasoning, and paprika.
- Season the chicken with halkf of the spices, rubbing well
- Add the four to the remaining spices and roll the chicken in the flour.
- In a large skillet, preferable cast iron, add enoug oil to equal 1/2 to 3/4 inch hot oil.
- Heat oil to 365°.
- Place the chicken pieces in the hot oil and cover.
- Fry until golden brown, turning once, 15 to 20 minutes.
- Drain cooked chicken pieces on a wire rack
