Ingredients

Cajun Fried Chicken

1 3 pound whole chicken fryer, cut into pieces
1 cup all-purpose flour
1/8 tsp salt, adjust to your taste being careful to compensate for the Cajun seasoning
1/8 tsp black pepper, freshly ground, adjust for your taste
1 Tbs paprika
1 Tbs Cajun seasoning
1 Tbs cayenne pepper
1 quart canola oil, for frying

Cajun Fried Chicken Directions

  1. in a bowl mix salt, pepper, cajun seasoning, and paprika.
  2. Season the chicken with halkf of the spices, rubbing well
  3. Add the four to the remaining spices and roll the chicken in the flour.
  4. In a large skillet, preferable cast iron, add enoug oil to equal 1/2 to 3/4 inch hot oil.
  5. Heat oil to 365°.
  6. Place the chicken pieces in the hot oil and cover.
  7. Fry until golden brown, turning once, 15 to 20 minutes.
  8. Drain cooked chicken pieces on a wire rack
