Ingredients

Carrot Raisin Salad

4 cups carrots, raw and grated
2 1/2 cups crushed pineapple, drained
1 cup raisins, not packed
3/4 cup mayonnaise
3 tsp granulated sugar
1/2 Tbs lemon juice

Carrot Raisin Salad Directions

  1. Chill all ingredients except for the sugar for at leas 30 minutes.
  2. In a bowl, mix sugar into the pineapple.
  3. Add the mayonnaise.
  4. Add lemon juice.
  5. Add the raisins to the carrots in a large bowl.
  6. Add dressing mixture to the carrots and raisins.
  7. Chill until ready to serve.
