Ingredients
Espresso Syrup
4 tsp dried instant coffee or espresso |
1/3 cup water |
1/4 cup sugar |
2 Tbs Coffee liqueur (like Kahlua) |
Cheesecake
1 7.6 ounce package Delallo lady fingers (you will need about 12 to 16 of them) |
1/2 pound mascarpone cheese (if you can't find it, its ok to use cream cheese) |
8 ounces cream cheese |
2/3 cup sugar |
1 tsp vanilla extract |
1 Tbs Kahlua liquor (optional) |
4 large eggs |
2 large egg yolks |
1/3 cup heavy cream |
cocoa powder or cinnamon for dusting |
Chocolate shavings for garnishing |
Topping
16 ladyfingers quatered (can use up to 20 if needed) |
1/2 cup unsalted butter |
1/2 cup sugar |
2 Tbs espress or instant coffee dissolved in 1 * 2 tablespoons hot water |
non-stick cooking spray |
Tiranmisu Cheesecake Directions
- Preheat oven to 350°
- Spray a springform pan lightly with cookign spray.
- For the Syrup - Combine, water, sugar, and coffee in a small saucepan over medium heat,
- Stir until sugar is dissolved.
- Remove from heat and let cool to room temperature.
- Stir in the coffe liqueur.
- For the Cheesecake - Arrange the ladyfingers in the bottom of your springform pan. Cut or trin the lady fingers to fill the bottom of the pan.
- Brush the syrup over the ladyfingers and allow the syrup to soak in. repeat until the syrup is gone. (make sure the cookies hare well saturated with the syrup, otherwise, they will rise to the top when cooking.)
- In a large bowl, using an electric mixer on slow speed, cream the cream cheeses, mascarpone cheese, and sugar.
- Add the vanilla, (Kahlua liquor), egg, egg yolks, and the heavy cream.
- Pour over the prepared ladyfinger, (the crust.)
- In a small saucepan, over low heat, melt the butter and the sugar.
- Using a whisk, briskly blend the dissolved coffee.
- Pour into a medium-sized bowl.
- Add the quartered ladyfingers.
- Whent he liquid is soaked iun, arrange on the top of the cake.
- Bake for 30 minutes or until the cake is set.
- Remove from oven and cool to remoon temerature, then refirgerate for at least 4 hours to 24 hours before serving.
- Just before serving, remove from pan, and sprinkle a handful of shaved chocolate over the top and aroung the sides of the cake.
- Just before serving, sift some cocoa powder over the top of the cake. (you can use cinnamon to if you desire.)
Notes
** If you have it, you can use a coffee flavored syrup.like Torani
