Ingredients

Cilantro Lime Rice

2/3 cup white basmati rice
1 cup water
2 tsp fresh cilantro, chopped
1 teaspoon olive oil
1/2 teaspoon kosher salt
1 med lime, juiced

Chipotle Copycat Cilantro Lime Rice Directions

  1. In a 2-quart heavy saucepan, heat oil over low heat.
  2. rinse the rice, well.
  3. Add rice and the juice from half of one fresh lime.
  4. Stir for 1 minute.
  5. Add water and salt. Bring to a full boil.
  6. Cover, turn down to a simmer over low heat.
  7. Cook until the rice is tender and the water is absorbed. About 25 minutes.
  8. Add the chopped cilantro and the juice from the other half of the lime.
  9. Fluff rice with a fork.
