Ingredients

Copycat Chipotle® Cilantro-Lime Brown Rice

4 cups water
2 cups brown rice
1 medium lime, juiced
1 teaspoon garlic, minced
1 teaspoon extra virgin olive oil
1 teaspoon kosher salt
1/2 cup fresh cilantor, chopped

Chipotle Copycat Cilantro Lime BROWN Rice Directions

  1. Bring water and rinsed brown rice to a boil in a sauce pan.
  2. Reduce the heat to medium-low and cover. 
  3. Simmer until rice is tender and the liquid is absorbed. (30 to 45 minutes.)
  4. transfer the rice to a large bowl and cool slightly about 5 to 7 minutes.
  5. in a small bowl, whisk together the lime, garlic, olive oil, and salt.
  6. Stir into the rice and gently fold in the cilantro.
