4 cups water |
2 cups brown rice |
1 medium lime, juiced |
1 teaspoon garlic, minced |
1 teaspoon extra virgin olive oil |
1 teaspoon kosher salt |
1/2 cup fresh cilantor, chopped |
Chipotle Copycat Cilantro Lime BROWN Rice Directions
- Bring water and rinsed brown rice to a boil in a sauce pan.
- Reduce the heat to medium-low and cover.
- Simmer until rice is tender and the liquid is absorbed. (30 to 45 minutes.)
- transfer the rice to a large bowl and cool slightly about 5 to 7 minutes.
- in a small bowl, whisk together the lime, garlic, olive oil, and salt.
- Stir into the rice and gently fold in the cilantro.
