Ingredients

Chorizo Spice

2 Tablespoons sweet paprika
1 Tablespoon smoked paprika
1 Tablespoon hot paprika
1 teaspoon chili powder
2 teaspoons dried oregano
1/2 teaspoon chipotle powder m (more or less to you personal taste)
1 teaspoon cumin
1 teaspoon granulated garlic
1/4 tsp granulated onion
1 teaspoon fresh black pepper, ground

Chorizo Sausage

1 pound ground pork
1 pound ground chicken
1 tablespoon rice wine or white wine vinegar

Copycat Chipotle Chorizo Directions

  1. Combine the spices for the chorizo seasoning in a small bowl and set aside.
  2. Over medium heat, add the ground or, ground chicken to a heavy skillet. While cooking the meat, scramble and cook until the meat is almost done.
  3. Add the chorizo seasoning, about 3 Tablespoons to the meat mixture, mixing the spices well into the meat and the meat starts to become a bit crusted in spots.
  4. Add the balsamic vinegar, combining well, seasoning to your desired flavor.
