Meat Sauce:
| 1 lb sweet & Spicy Italian sausage |
| 1 clove garlic, crushed (you may add 1 more clove if needed) |
| 1 Tablespoon Basil, whole |
| 1 1/2 teaspoon salt |
| 1 28 ounce can stewed tomatoes |
| 2 6 ounce can tomato paste |
Lasagne:
| 10 ounce Lasagne noodles |
| 1 teaspoon salt |
| 1/2 teaspoon oil |
| water, boiling |
Cheese Filling:
| 4 cups Ricotta cheese (or cottage cheese for moister lasagna) |
| 1 cup grated Parmesan or Romano cheese |
| 3 large eggs, beaten |
| 3 teaspoon salt |

| 1 16 ounce bag mozzerella cheese |
Renee's Lasagne Directions
- for the sauce:
- Brown meat slowly. Spoon off fat. Break in small pieces. Add remaining ingredients. Simmer uncovered ½ hour. Then;
- Note ! This is meat sauce only
- for the noodles:
- cook 10 oz. lasagne or wide noodles until tender in a large amount of salted water, add ½ tsp oil then cook about 10-20 minutes. Drain, rinse in cold water. ½ tsp oil keeps noodles from sticking during boiling process
- For the cheese filling:
- Mix first four ingredients. Place half of the cooked noodles in a 13x9x2 baking dish. Spread ½ the cheese filling over noodles. Cover with ½ of the sliced Mozzarella cheese then ½ meat sauce. Repeat layers. Bake in moderate oven at 375 degrees for 30 minutes. Before serving, let stand 10 minutes. Filling will set slightly. Makes about 12 servings.

- You can assemble a day ahead and then bake about 45 to 60 min or until it bubbles, flavors blend and intensifies. over night
