Vegetarian Chopped Liver
| 1 1/2 cup green beans, cooked and finely ground |
| 1 large hard-boiled egg |
| 1 medium onion, chopped |
| 2 Tbs vegetable oil |
| 1 dash salt |
| 1 dash pepper |
Vegetarian Chopped Liver Directions
- Mash hard-cooked egg with beans. Lightly brown chopped onion in hot oil and add seasoning to suit the taste with salt and pepper. This should be a compact mass and look just like chopped beef of calf's liver.
- Use on canapes, for filling celery, or shape into tiny marble-sized balls and serve as a salad on shredded chicory of mixed greens.
- Garnish with black or pitted green olives, or dot with a bit of sour cream and sprinkle with paprika.
