Soup
| 1 lb Italian sausage |
| 1 cup onion, chopped |
| 2 cloves garlic, crushed |
| 5 cups beef broth |
| 2 cups tomatoes, chopped |
| 1 8 ounce can tomato sauce |
| 1/2 tsp oregano |
| 1 cup water |
| 1 cup carrots |
| 1/2 tsp basil |
| 1 1/2 cup zucchini |
| 3 Tbs fresh parsley, chopped |
| 1 medium green pepper, chopped |
| 8 ounces mini tortellini or ravioli |
Italian Sausage Soup with Tortellini Directions
- Remove the casings from the sausage if necessary.
- Brown the sausage in a deep pan.
- Remove
- Drain all but 1 tablespoon of fat from the pan.
- Saute' onion and garlic.
- Add the broth, the sausage, tomatoes,tomato sauce, oregano, water, basil, and carrots
- Bring to a boil.
- Reduce the heat and simmer, covered for 30 minutes.
- Skim off the fat.
- Stir in, zucchini, parsley, green pepper, and the ravioli or tortellini
- Sommer, covered for 20-30 minutes until the tortellini/ravioli is tender.
- Serve with grated Parmesan cheese.
