| 1 lb bulk Italian sausage |
| 1 cup onion, chopped |
| 2 cloves garlic, crushed |
| 5 cup beef broth |
| 1 cup water |
| 2 cups tomatoes, chopped |
| 1 cup carrots, sliced |
| 1/2 tsp basil |
| 1/2 tsp oregano |
| 8 ounces tomato sauce |
| 1 1/2 cup zucchini |
| 3 Tbs parsley, chopped |
| 1 medium green pepper, chopped |
| 8 ounces frozen tortellini |
Italian Sausage Soup with Tortellini I Directions
- Use bulk sausuage or take the casings off regualr sausage.
- Brown the sausage
- Remove from Dutch oven.
- Retain 1 Tablespoon of sausage drippings.
- Saute onion and garlic in reserved drippings until tender
- Add beef broth, water, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.
- Bring to a boil.
- Reduce Heat.
- Simmer, unvovered, 30 minutes.
- Skim fat.
- Stir in zucchini, toretelini, parsley and green pepper.
- Simmer covered, until tortellini is tender (20-30 minutes.)
- Sprinkle with Parmesan cheese.
